В нем можно просто ОТКЛЮЧИТЬ автообновление расширения

У меня расширения не авто обновляются. Не помню как отключал, но это определённо возможно. Может достаточно включить Режим разработчика или какой-то ключ добавить в параметрах запуска или реестре.

I find it curious that the Version Changes of the latest Stable v5.1.1130.123 are identical to v5.1.1130.122.

version 5.1.1130.122: 'Search google for "xxx"' in contextmenu open result in current tab instead of open new tab. It has same behaviour as search in address bar when I change "Open search result in..." in tab options
Any problem if I downgrade to version 5.1.1130.82 without delete User Data folder? Thank you

They are based on the same Chromium version, you can overwrite each other without worry.
